The
processed meats trade is age old, and we have spared no expense here,
the Berkshire genetics in this meat shine through. Ever since the pig
was reared for meat, people have endeavored to utilize every bit of the
animal. Far from being second rate, “other parts” of the carcass make
up countless traditional recipes and are the harborers of subtle flavor
profiles not found in primal cuts. Sausage, Bratwurst, and other
processed delicacies of superb quality in the old world tradition can
be purchased through many high end retailers.
